Asian Steamed Tilapia with Ginger & Scallions

Ingredients
- 1 whole tilapia or 2 tilapia fillets (skin-on)
- 1 tbsp ginger paste
- 1 tbsp fresh ginger, julienned
- 2-3 scallions, sliced
- 1 tbsp cooking rice wine
- 1-2 tbsp seasoned soy sauce for seafood
- 1/2 tsp white pepper
- 1-2 tbsp crunchy garlic with chili oil

Prepare the fish. Rinse and pat dry. If whole, make a few shallow cuts on both sides.

Season. Rub with ginger paste and white pepper, then drizzle with rice wine.

Add aromatics. Place half the ginger and scallions under and on top of the fish.

Steam. Steam over boiling water for 8-10 minutes (fillets) or 10-12 minutes (whole fish) until it flakes easily.

Finish. Remove excess liquid, add the remaining ginger and scallions, and drizzle with seasoned soy sauce.

Final touch. Spoon crunchy garlic with chili oil on top for aroma and a little heat. Serve with steamed rice.
